Early in his career, he spent time at an insurance defense firm before leaving within a year to represent injured people instead. Before he built the firm, George earned his law degree from the University of Texas School of Law, served as a policy analyst in the Texas Senate, and completed internships with United States District Judge Fred Biery and Chief Justice Alma López of the Fourth Court of Appeals.
