Sarah Beth currently contracts with the Office of Civil Legal Aid representing youth in dependencies in both Thurston and Lewis Counties. Previously, Sarah Beth practiced in the areas of criminal law, dependency, estate and probate, guardianship, property and real estate, and business law.
Sarah Beth grew up in a Cuban American household in Olympia, Washington, where she graduated from Capital High School. Sarah Beth began her undergraduate program at the University of Washington in 1998. While there, Sarah Beth held a part time job working as an at-risk youth teacher to 7th graders at a Renton middle school and also volunteered with the Hungry for Homelessness Project. In 2003 Sarah Beth graduated from the University of Washington with Bachelor’s degrees in Political Science and Business.
In 2004 Sarah Beth attended Seattle University School of Law. Throughout law school Sarah Beth was active in the Latino/Latina Law School Association, serving as the group's secretary during her third year and as one of the Social Directors, helping to set up their national parent organization’s national conference. Sarah Beth also interned at the Ronald A. Peterson Law Clinic in both the Child Advocacy Clinic and International Human Rights Clinic. Sarah Beth graduated from Seattle University with her J.D. in 2007 and was admitted to the Washington State Bar that same year.
Sarah Beth began her legal career working as a criminal public defender representing indigent persons for both Snohomish County and Kitsap County. Sarah Beth appeared and litigated in municipal, district, and superior courts on misdemeanors and felonies. During this time Sarah Beth also volunteered with Kitsap County Youth Court; an alternative dispute resolution and education program for local kids, which acted as a peer group sentencing system for juveniles with the option of diversion in criminal cases.
In 2010 Sarah Beth left her home of Washington to follow her fiancée to New Hampshire where Sarah Beth studied and passed the New Hampshire Bar Exam. Sarah Beth and her husband started their own general law practice; The Huot & Huot Law Firm. During this time Sarah Beth also began working part time as an Assistant County Attorney for Belknap County and was their first felony juvenile prosecutor while maintaining an adult felony caseload as well. Later, Sarah Beth had the opportunity to start working part time for the Patrick Wood Law Office, a general practice law firm that focused in estates, property, and business law. Sarah Beth enjoyed her time at that law firm and decided to solely work for the Patrick Wood Law Office in order to learn new areas of practice outside criminal law. While living in New Hampshire Sarah Beth volunteered with Hands Across The Table (a food service for those in need in the community), was a member of the local Laconia Altrusa Board, and was on the Lakes Region Habitat for Humanity Board.
In 2013 Sarah Beth temporarily relocated to Colorado Springs, Colorado while her husband was mobilized with the Army to nearby Ft. Carson. While in Colorado Springs Sarah Beth continued to consult with the Patrick Wood Law Office and volunteered with HEART (a homeless outreach program), the Marian House (a local food bank/service for the homeless), and TESSA as a state certified victim’s advocate. During this time Sarah Beth was awarded Volunteer of the Year by TESSA in their children’s program.
In 2014 when Sarah Beth’s husband’s mobilization ended the two decided it was time to move back to Olympia, Washington and start a family. Sarah Beth joined the Desmond Law Group, P.S., representing both adults and juveniles in dependency, termination, and post-termination proceedings in the Thurston, Mason, and Grays Harbor Counties. Two years later Sarah Beth joined Jessica Jensen Law and then later, Conolly Tacon & Meserve, continuing her focus of law in areas of property, real estate, and general civil litigation.
In 2017 an opportunity arose for Sarah Beth to join a study program in Lewis County helping youth be appointed attorneys in their dependencies, no matter the youth's age. While participating in the study program the need for youth to have their own representation was apparent to Sarah Beth. Consequently, in 2019 Sarah Beth created her own firm, Huot Law PLLC, and has since continued to focus her practice primarily in representing youth in their dependencies. Sarah Beth works hard to advocate for and share the voice for otherwise forgotten foster youth, helps implement change to support foster youth through litigation and legislation, and also mentors' fellow local youth attorneys within Washington State. Sarah Beth is also a board member of the F.I.R.S.T. Clinic in Snohomish County, and is member of the local Olympia Kiwanis Club since 2017, and currently sits as a board member.
Sarah Beth is a well-rounded attorney with a lot of experience in the areas of litigation, trial, motion writing and arguments, negotiation, and mediation. Sarah Beth enjoys meeting with her clients and helping them navigate through the legal system in the most positive way possible.
