I think you should list the entire trip. Let USCIS do the math.

As a green card holder she cannot leave for more than a year without first obtaining a re-entry permit.

If your wife qualifies for citizenship, she can apply using form N-400. Since you just got yours, you can surely teach her how to get hers.

I agree with my colleagues. You can file both at the same time, but first the extension must be approved, before the EAD.
