Doubtful, but maybe. Entrapment takes a lot more than providing an opportunity, but each state has different case law about what can constitute...

Probably. Victims do not have the power to file or drop charges. That power lies solely with the prosecutors office.

This sounds like a civil case, not criminal. Also, you can't just use a statement from someone at trial, it violates the rules of evidence.

This could be theft. But, if they didn't call the police, and no criminal charges are filed, then you don't have to pay the store a darned thing....
