Because CIS has not mailed out the receipt for your I-485 yet, obviously.

Your son can file for you but not your wife and two step-daughters unless your marriage to her took place before your son's 18th birthday.

You should be talking to your immigration attorney about all of this. AVVO is for people who might need an attorney, not people who already have one.

In the H-1 process, you can either choose an extension or a notification to the US consulate. You should be talking to your immigration lawyer....
H4 EAD can work for non E-Verify Company?

Unfortunately, uncles cannot "sponsor" anyone under US immigration law. It also will not help if he "sponsors" your Mother. Your only options...

The immigration service is taking more than 8 months for the I-130 petition so this "delay" is not unusual.
