If you no longer are in the J program you status is over and you need to change to another status or program or depart the US.

The H-1B is the petition of the employer and if the employer does not want to disclose the inforrmation to you there is little you can do

If your children are US citizens food stamps for them are permissible, otherwise obtaining food stamps is not recommended.
