Showing too much is not a disadvantage. You want your wife to be with you so provide what they have asked for.

Yes your grandmother must pay the biometrics fee. Look at the USCIS website in the forms section for the form I-90.

The form you need is the advance parole - form I-131. You can get the form and the instructions on the USCIS website in the forms section.
