If you know what he charges keep records of the clients and payments and then use their testimony to establish the hidden income.

They can continue to charge you if the agreement opening the account provided for that and the account has not been settled.

Unjust enrichment is not relevant here, and if a payment was due the State maay levy for taxes. Make sure you consult a tax attorney.
