Your spouse should be able to get EAD and SSN once added to the case.

A person may submit an EAD application 150 days after the case was pending minus any delays caused by the applicant, but it will not be granted...

You cannot go away and come back on ESTA to file for adjustment of status that would be in violation of the Immigration regulations.

If you enter in B status, you will need to file for change of status to be able to be in F1.
