I got pull over and the officer says my license is suspended but I have the interlock on my car and paying my fines on time
I look on the DMV web and it says licence is suspended for interlock cancellation but it's not cancelled and I'm up to date on my payments

There are many reasons your license can be suspended, for example being charged with a DWI where your BAC was found to be above a 0.8 by a test, refusing to perform a breath test, refusing to perform a blood test, or like you said, issues with your interlock.
