I suggest you ask your lawyer to seek an adjournment. He or or she may also be able to appear on your behalf using a waiver of appearance.

The lack of a supporting deposition does not mean that the victim will not be available to testify at trial.

I do not think so. I am pretty sure not all prosecutors who prosecute speeding ticket always obey the speed limit.
