Can i get in trouble or sued from a company if i quit the job they offered me, and i did NOT sign a contract with them.

Without a written contract the law presumes you to be "at will". This means you can quit at anytime with or without notice.

If you are a volunteer you should not be paid any wage. If you are an employee you should get minimum wage.
