Overstay is not an issue, and he will be able to adjust. Unless there are some other things on his record making him inadmissible.

You are out of status, without the underlying job, and must change to some other status, visitor, student, or other.

They can file with you. You list them as dependents on Form I-129, and make a concurrent I-539 filing - one form.

Yes, you are on right track, and seems to have knowledge of the process. There is no requirement that you need to have an attorney. You can self file.

You can use AP till expiration date or date of I-485 denial, whatever earlier. NOID has no effect, until USCIS actually issues a denial. It cannot...
