there is some flexibility with the fingerprinting and interview. With fingerprinting you can sometimes show up with your notice; early or late. ...

No, you will not need to have your F-2 visa re-stamped due to your spouses change of university.

your employer will deduct these employment taxes only students in the US qualify for the exception.

It is possible. Separate addresses will raise additional scrutiny regarding the bonafides of the marriage.
