No, you don't need to go for "stamping" now. You can wait until your new H-1B approval notice expires.

Do it in Canada. No one will ask you the reason why. They understand. Just remember though, that you'll need a visa to enter Canada.

No. You cannot continue being employed without valid work authorization. You can only resume once obtain the EAD, which takes 90days from receipt...
