Yes, it isn't up to you to file charges, thats the DA. If more charges are filed than what he bailed out at, then yes bail could be set and raised.

Hearings can be continued for evidence, attorney availability, among other reasons. If someone refuses to waive time, then their case could go faster.

Your lawyer should know, and you wouldnt be arrested unless you agreed to that as part of your plea deal.

They could sue you, but unless the Court ordered you to pay after a conviction, you can generally ignore it, absent them suing you.

Generally yes, it will appear, though infractions are not held against people for jobs. You can expunge an infraction under PC 1203.4a.
