Filing for adjustment of status would not necessarily affect an OPT or vice-versa, however you may not need an OPT EAD if filing for AOS.

Once married, she could file for adjustment of status in the US, obtain a work authorization and apply for a SS# and everything else.

The issue in these types of case sis more along the lines of whether the University is accredited, not whether the school is for-profit or non-profit.
