You should hire one at purchase agreement stage. Purchase agreement could include escrow mechanism to fund on approval of the visa to protect you.

It is generally much faster to obtain a marriage license and get married in Nevada than in other States.

She is not eligible to adjust status if out of status, unless the spouse is a US Citizen.
