Your son's DUI conviction, alone, should not have any impact on your visa application.

She could apply for a reentry permit before departing to allow her stay out of the US for up to two years. Also, if you have a contract to work...

There is no inherent risk in traveling to your OPT issuance, however, it may not be advisable.
