Why would i be told after refusing a settlement that arbitration would take 60 days. To be later told it would be 3 months more.

There are legal technicalities that may bar you from suing your employer, but you should definitely see someone to pursue any potential claims....
Can an employer demote an employee without any given reason. And also not discuss a pay wage with the employee.
