How long does texas have to remove a felony from your record after the conviction was overturned?

You have to file a motion to get your record expunged before the state will "remove" the felony for your record. It should show the acquittal, but...

Yes, they do need probable cause, but that is pretty easy for them down by the border.

When on a deferred adjudicated probation felony charge and completed it successful why do employers see it as a conviction?

They don't see it as a conviction. They will be able to see that you were on probation and that you may have plead guilty to the offense.
