You certainly can apply for probation in a plea deal. Get yourself an experienced criminal defense attorney to represent you in the case.

Blue warrants can not be bonded out. It sounds like he is a habitual and could be looking at minimum of 25 years to life

I doubt it. If you were not arrested at the store chances are you will not be prosecuted

Provided the assault is not family related you would qualify for an order of non-disclosure. You can file for an expunction for the theft
