II got a ticket on Dec 24th for not having Insurance but the car is insured I just couldn't find the car insurance card ?

You may have missed a court date or the clerk reported it wrong. With proof that car was insured on the day of the ticket they must dismiss the case.

SR22 required for no insurance supervision. That is the law.
I live in Texas and required to have interlock device.
Can an officer see this on his computer?

No to both your questions. You have to have the RDP for five years no matter when you apply

If you receive supervision, your license status- whether good or bad- will not change.

That would not automatically happen. prosecutor would have to find out about it and file a motion to vacate the supervision.
