Hire an attorney. Since you can't merely "sign over" custody, the attorney needs to figure out what he's done and the best way to attempt to fix it.

I was awarded back child support for 8 years but now the mother have custody. what will happen to the back support she owe me?

Yes, the claim for back child support is still valid. Just because she has the child now does not mean she didn't need to pay that in the past.

If he's 18, he's not a minor. If he's not a minor no one has "custody" of him.

How do you not have a parenting plan? Set an appointment to talk to an attorney in the area. You may have bigger issues.

You can only surrender your rights to a step parent, not a boy friend. So, if she gets married, then surrender. You can't do it before then.

Asking a judge to do that, based on your reasoning, is a good way to lose your case. Find some money to spend on an attorney, it will be well spent.
