They shouldn't do anything while the stay is in place. Forcing you to go to a mediation is most likely going to violate the stay.

Yes. You'll need to produce those. If you don't want to produce actual copies, I'd suggest getting a transcript from the IRS.

Your homestead can be protected. Liens can be stripped. Your attorney will know how to do all of that.
In Chapter 7 bankruptcy, how many days after the post 341 60 days does the discharge and closing of the case typically occur?

70 days should go by before you need to worry about anything. Remember x-mas and new years etc. were in this past 60.
