NVC will review submitted documents and send you an RFE for missing documents.
Should joint-sponsor be included (as added insurance) when filing I-130/I-485 packet, or wait and add later, only if required?

It depends. File initially with packet if possible or subsequent to initial submission.

Bring the passport(s) for officer review, espcially to confirm manner of entry and trip history, The passport(s) is/are retunred to you.

The effective date of the EAD is dtermined by the officer and is unkown until the end of adjudication.
