In theory this could work if your true intentions were to study. Though, I doubt the ESL classes would last 2 years plus.

Your B-2 will remain valid, but I would be guessing if I were to tell you will be allowed to re-enter next time.

It depends what documents are being requested. Certain documents, like court dispositions, should be provided in original/certified copy.
