You can certainly apply for your wife's EAD and extension but if you do the transfer without an extension then you can just keep the present EAD...

You should use your own address, you can inform USCIS of the move by submitting their free online form called the AR-11.

You can get a J visa again but if you are subject a second time you will need another waiver (and some countries won't issue 2 NOWs)

Just be aware that your TPS may be denied - you should bring this information to an attorney for a personal consultation (many do this for free)
