Your uncle cannot sponsor you. He can sponsor your father. You will have a much faster road to US residency through employment.

There is no 8 month rule. He cannot file for a green card of work permit unless you file a visa petition for him.

The I-94 governs when your status expires. If it is not yet expired then yes you can apply for adjustment.
