yes, the judge can postpone a hearing for any reason the judge decides to. The judge could also decide not to postpone it

Check your contract. Your contract controls. If it says they can then they are allowed to. THey must adhere to the contracted rate

Technically yes. I would get an agreement with the landlord or file a suit in court to get out so you can get your security deposit back
