S Corp and LLC provide basically the same tax benefits; they'll both be "pass-through" entities. (The tax code actually doesn't recognize "LLCs"...

Yes, you can file your own taxes. Probably would be best to use TurboTax or a similar program.

I'm not sure about Texas law but in Louisiana there was this thing where you could make a formal demand for unpaid wages and they owed you...
