In a Criminal Case, has the defendant got to prove anything or is it just the plaintiff and DA who have to prove their claims?

The burden of proof is always on the DA but it can be met by the testimony of one witness.

The amendment likely happened before the plea. Once you plead guilty, the case is over and it cannot be changed.
