No she does not, she is an American citizen

I have gotten an NOA1 letter. For my I 751 however I would feel more comfortable traveling if I had a stamp in My Passport.

Schedule an Info Pass appointment. take your receipt notice, passport and green card. They will stamp it for you.

yes, it will probably delay the case a bit (although USCIS is open and running), problem will be with NVC and DOS

Although you have a joint sponsor, you still need to submit a signed I-864 and if you have not filed your taxes, then you need an explanation...
