I work with employer A and I140 approved EB2. As a safety, Can I file GC with employer B but may or may not join B in future?

If you file a green card it is with the intention of working for that employer on a permanent basis. You cannot file speculative petitions.

Yes you can join the employer on 7/8 as long as you continue to work for the previous employer and he does not cancel the H1.

Yes your mother can submit an affidavit. You can have friends also submit affidavits, preferably who live in the US.

Not sure why the H1 does not have a i-94? If the first visa is cancelled and the second is denied, you dont have legal status. You will get the...
