E-2 is probably your best bet. Be careful as to the amount of investment. It cannot be a small amount. You will have problems if the investment amount is not proper in the eye of the officer for the business that you will be opening.

If you are in removal proceedings, you should have a Notice to Appear and not a Order to Show Cause. Regardless, you need an attorney to adequately prepare your case. Be very careful how you answer each and every question before the Immigration Judge. You need to be prepared based on the charges and allegations.

You need to convince the consulate that your friend will be returning to his or her home country and does not plan on staying in the United States beyond the permitted time period of whatever visa she/he is seeking. You need documentary proof.

I completely agree with my colleague. In addition, make sure you take your passport and all related documents with you for your consultation. Don't wait! I see it too often where people may be able to get status in the United States and they wait until it is too late.
Yes, you can travel. Make sure someone is responsible for your mail and you do not miss any appointments or interviews with USCIS. In addition, make sure it is just a visit and you maintain your residency in the United States.
You should never miss an interview. However, you should make sure someone checks your mails while you are gone. If you receive any correspondence from immigration, make sure you notify immigration if you will not be able to attend an interview or biometrics appointment. If he has never been to the United States and has no other inadmissibility issues (crimes, etc...), if you get married to your boyfriend in Mexico, you may apply for lawful permanent resident status (green card) and bring him to the United States.
