In the state of Illinois is it legal for a company to cancel your insurance prior to returning to work from sick leave

This would depend, in large part, on whetherr your leave was covered by the Family and Medical Leave Act. If it was or should have been then an employer has a duty to maintain health benefits during an employee's leave.

Is it legal for a corporation to post employees attendance records for everyone to see

Depending upon the reason for the absence, there may be certain privacy protections in place, i.e. medical issues, etc, however I do not know of any laws which would protect just general attendance records.

Is it legal for a company to submit write ups to human resources without giving notice of the documentation to the employee

Generally, yes unless the company's policy prohibits it. However, you may want to consider whether or not the write up contains any defamatory information. At least in Illinois, there are cases that state that a publication of defamatory information even just within the workplace may be actionable.

Employment/labor law can I be fired while on probation for missing too much work do to family illness

When you say you are "on probation" what does that mean for your tenure with the company? How long have you worked there? Are you eligible for FMLA leave? If so, those provisions should allow you 12 weeks of unpaid leave.
