Unfortunately, a person is out of luck if one of the conditions of a plea is an adjudication of guilt. For instance, a lot of clients are surprised to find out they can't go back and seal/expunge a DUI. That's because under Florida Statutes there is a mandatory adjuducation of guilt when pleading to a DUI. When it comes to other crimes, there has to be a withhold of adjudication, but even then some are exempt from sealing/expunging.
