I applied for adjustement of status nov 2018 and finally I received my interview letter yesterday, however we have made plans to go to Philippines from january 17, to feb 1 to have our church wedding, however my interview date happened to be on january 30. We already booked our tickets and the wedding have been set too. We don’t know if we should reschedule it or not?what are consequences if we reschedule it?

If you "applied for adjustement of status", that means you do not have a legal permanent resident. If you go outside the US without LPR, you may find yourself unable to return to the US. The US border inspector may decide that you are not admissible into the US.
The best thing for an alien wanting to gain LPR often is to not leave the US until the alien has been granted LPR.
