I have applied for stem extension on Jan16th and got an RFE on April 3rd asking for the "List of all the address (With proofs) I have lived right from the time I enrolled as an F1 student." I was not in the leasing for some of the address I have been, so I don't have any leasing documents or utility bills. Will the USCIS accepts the bank statements as the address proof?
Thanks in advance...
USCIS may accept the bank statements. You should provide much more if you can find more. Perhaps a letter from your landlords, utility bills etc.
The answer provided here is general in nature and does not take into account other factors that may need to be reviewed for a more precise answer. You should consult with an immigration attorney before taking any action. The answer here is not intended to create an attorney-client relationship.
USCIS accepts the bank statements as the address proof. Provide as much evidence as possible. You were required to file AR-11 change of addresses. You are required to notify the school and SEVIS of address change.

Receiving a request from ICE is serious business and would argue in favor of hiring counsel. If you are proceeding on your own, I would echo the prior answers in recommending that you assemble as much evidence as possible. That evidence could come in the form of declarations, sub-lease agreements, etc.

Lease is not the only evidence. Get creative or work with an attorney who can prepare a custom list for you.
