Should I only send the new versions of the form? Or the old versions too?

Form I-130 should be Feb 2019 edition. Form I-485 must be either July 2019 or Dec. 2017 edition. I wouldn't be surprised if USCIS rejected I-485 for using Dec. 2017 edition, even though USCIS website still says "We will also accept the 12/13/17 edition" right now. If you rejected, just replace the obsolete form/s (no need to resubmit the old ones).

Only submit the new forms and make sure her medicals are also on the new forms. With the medical you never know until the day of the interview so check with the medical provider and if an old version was used, take the updated version on the day of your interview.
