My husband recently had some health issues and had a stroke and his mother took him and had a financial power of attorney made up is there anything I can do to get it over turned
Yes, Power of Attorney designations are freely revocable by the authorizing person. Have your husband revoke the Power of Attorney in writing and send it to your mother in law.

Anything YOU can do to revoke a valid power of attorney? No. But your HUSBAND if he is now competent to act can revoke the power of attorney.
If the power of attorney was not valid because of incapacity or undue influence then you can try to challenge it, but it is far easier for your husband to simply revoke it if that is possible.
