I am a post-doc on a J1 visa and recently got my I-140 petition approved. I immediately got my papers together and submitted them for adjustment of status (I-485). At the same time the University extended my DS-2019 without my knowledge. Can this cause trouble with my I-485 application? Should I submit updated DS-2019 to the USCIS?

I don't see this as being a problem. DS-2019 in J1 context is similar to I-20 in F1 context, and neither is a status in itself although it enables such status.
No need to submit updated DS-2019 unless there is an RFE, but there is unlikely to be if you were maintaining J1 status when I-485 was filed.

An extended my DS-2019 at the same time as filing an I-485 will not cause trouble with the I-485 application. You may update the DS-2019 at interview.
