The first thing to do is to get married to your fiancee. Then she can petition for you even as a green card holder. She cannot petition for you as a fiancee because she is not (yet) a US citizen.
Assuming the marriage were to occur before her departure, it will take anywhere from 4-7 years before you can get your green card.
And no, her father could not, and cannot sponsor you because you are not a family member.
Your fiance can sponsor you if she marries you. however as an LPR an immigrant visa will not be available. You will have to wait. Once she is a USC she can sponsor you and a visa will be available without a wait.
