Unmarried people should NEVER be on a car title together, and you are a perfect example of why.
You both own the car. You can go get it if you can find it and she can come get it back. It’s not theft either way, and it renders the car useless to you both because you never know if it will be where you last left it.
One of you needs to voluntarily buy out the other one. If it’s a really expensive car you can go to court and force a sale, but that itself takes time and money.
