Does somebody know if the Immigration Officer can extend that time based on my written request 2 weeks before the expiration of 87 days or appointment at the Field Office? I understand that if I don't provide with the evidence (which is my divorcee decree) within that time frame, I will be put in removal proceedings and automatically can't legally work to support myself?

No, I don’t think the RFE response time can change. If there are circumstances beyond your control due to which you are unable to respond in time, you may be able to send a request, but no guarantees whether they would approve.
