I filed my 2011 taxes on March 1, 2012, already. I am filing the form I-864 on March 15, 2012. Since it is essential to file the "most recent tax return", in support of the form I-864, should I still attach my 2010 tax return in support of the form I-864, OR 2012 (that was filed), although the filing deadline April 16, 2012 has not reached? Which year's tax return would be considered "the most recent tax return", for my case?

If you have filed your 2011 return, it is your last filed return. If you have not filed yet, 2010 would be your last filed return.
Include your most recent tax return - your 2011 return. Even though it isn't due, you filed it already. You do not have to wait until the deadline to file your taxes. So, if you filed your 2011 taxes, that is the most recent return.
