If money is stolen from my wallet, can I have the police check it for fingerprints?

I agree, it is unlikely The Police will put forward the money and resources to have a Forensicist analyze fingerprints for a mere theft. You are better off asserting witnesses to the crime to gain a conviction.

You can ask but odds are the police will not put the resources into this issue. Try not to carry as much cash and don't let your wallet out of your possession.
