If filing divorce myself, can judge over rule Toyota and take my name off car title?

I suspect Toyota Financial wasn't talking about the car title. What they probably said was that they would not remove your name for the loan which is within their rights. They made the loan to you and your spouse. Just because you and your spouse are no longer married does not mean they have to change the terms under which the money was lent.
As part of the property settlement in the divorce, the Judge does has the right to say the other party gets the property and will be responsible for any debt associated with the property, but he does not have the right to change the "contact" between you and any lender. If your ex defaults on the loan and your end up having to pay, you have the right to sue him to recover your damages.
