You can get married the next day if you are divorced.

Once you have a Judgment of Divorce signed by the court, you are free to remarry.
You could literally walk from one courtroom where your divorce was finalized into the next one and get married again.
As others said, you could get married 1 minute after you're divorced. Only word of caution is to make sure the court date doesn't get adjourned, because it wouldn't get rescheduled that quickly (unless the judge is made aware of the pending remarriage).

The only waiting time would be for you to take care of the local requirements for applying for your new license. So learn about those in advance.
Don't let your soon to be ex know you are getting married the next week. Getting divorced makes people do unreasonable things like mess with your upcoming wedding date. I would not put down money to rent the room if you only have a 7 day window. Things happen - courts adjourn things, judges take unannounced vacations. I had a day's cases all adjourned last month because a court officer had a funeral that all the officers attended so no hearings took place.
