I have about 1 year and a half left on my 5 year informal probation for a misdemeanor DUI that i got back in late march 2016 in Orange County, CA. If i wanted to do jail time in exchange for the remainder of my probation, how many days would I be doing?

You would have to get on calendar and ask the judge to resentence you. Smarter move is to wait it out or petition the court to terminate probation early and expunge the conviction.
Generally the procedure would be to have your lawyer file a motion for early termination of probation, listing the reason(s) for the request, if the judge grants it your done if not, ask what can be done to end probation. The judge will make the decision regarding whether or not to offer you jail in exchange for terminating your probation.
